Four years ago, my youngest daughter was diagnosed with celiac disease—an autoimmune disease requiring a strict gluten free diet. It didn’t take long for us to realize our older 2 daughters’ seemingly different medical issues were symptomatic of the same disease. In trying to find the source and figure out a lifetime of headaches, fatigue & mood disorders, I had myself tested.

It was easy to change my shopping habits & cooking style, but a complete overhaul of my food intake? That was a little harder to take. However, I kind of like being healthy, and I’d certainly like to live a long life & watch my girls do the same. Thus, I live gluten free, no matter how reluctantly.
